Description
Parsnips don’t have to be long and skinny, difficult to harvest, needing deep soil to grow, but short fat parsnips are rare, so we decided to develop one ourselves. We mass crossed half a dozen lines including half-long European varieties and local cultivars, and selected short roots for 4 generations. We now haveĀ ‘Fatso’, a short fat parsnip, based on ‘Kral’ from central Europe, but with local genes for central Victorian conditions suited to our shallow soils. We recommend re-selecting for your local conditions from this still-diverse gene pool. Expect variation.
