Green when ripe

Green-when-ripe tomatoes maintain their green colour as they ripen but often develop a slight yellow colour when ready to pick. Give them a gentle squeeze to test for ripeness. Flavour is fantastic, as the chlorophyll seems develop extra flavour components in the fruit. Great for fooling birds – they don’t attack the green fruit.
